I have been eating beetroot too and have to make the dish again to capture it, they are so good roasted and as you did here they work perfectly to be roasted with another dish as do not need to be eaten straight away. So happy to hear you have found a way to enjoy this lovely vegetable and just cook for yourself. I’m might also think your husband could change his mind if you keep rolling out dishes loke this 😂 after all, he is coming around to parsley now 😂😂😂.   2. Thank god we all like beetroot in our family! They are very Nordic too and always bring me memories from my childhood, picking them from the ground at my grandmothers vegetable garden. That earthy smell…. delicious salad Oksana. Happy Saturday 💜

  3. 👏👏 yaaay Oksana 👏👏 now you can have your cake (beets) and eat it too 👏👏. He can have leftovers or pb&j sandwich and you can enjoy this glorious salad all by yourself 😜. It looks so tempting with the glistening beets and ruby like pomegranate seeds. I have to make this one. Thank you for the tip on leeks for steaming. Noted and will do so next time.   5. What a glorious salad! I don’t know how do you manage to make everything look so beautiful, Oksana 🥹😭💔💔💔Beautiful, colourful, healthy, and so delicious 🤤😍😍😍 I noticed that lots of men don’t like beets 😅 my husband can eat beets only in “Hering under the fur coat” salad 😂

  11. I knew you would love this salad, Oksana 😍 And I agree that you shouldn’t skip the pomegranate seeds 👌🏼I have some beets in the fridge too, maybe I should buy a couple of leeks, try this steaming technique and make this salad again 🤔😋

  15. Do you ever eat them raw, like the Crudités in France? A French friend made me a salad of grated beetroot, vinaigrette drizzled over, topped with sliced hard boiled eggs and chopped spring onions. We eat them this way, often without the egg, often as part of a salad, and love them.
