매자나무, 피스타치오 및 예루살렘 산 혼합 허브를 곁들인 사프란 쌀은

ottolenghi와 sami_tamimi Jerusalem의 바베리, 피스타치오, 혼합 허브를 곁들인 사프란 라이스는 남편이 이 이란 요리를 좋아하기 때문에 제가 좋아하는 요리입니다. 어떤 이유로 나는 결코 사진을 찍지 않지만 인공 조명 아래에서도 자리를 잡을 자격이 있습니다. 쌀과 물의 비율을 1:2로 사용하고 아주 약한 불에서 12-15분 동안 뚜껑을 단단히 덮고 5-10분 더 뜸을 들이면 밥이 완벽하게 익습니다. 이 레시피에서는 쌀을 먼저 녹인 버터로 코팅한 후 물을 넣습니다. 불을 끌 시간이 되면 사프란을 우려낸 물을 쌀 표면의 1/4에 붓고 납으로 5~10분 동안 덮습니다. 매자나무는 잘게 썬 말린 크랜베리 또는 살구로 대체하여 고소하고 달콤한 맛을 낼 수 있습니다. 허브의 경우 넉넉한 양의 바질, 파슬리, 딜을 잘게 다졌습니다. 다진 구운 피스타치오를 그릇에 허브, 바베리, 쌀의 흰 부분과 섞은 후 사프란 색 쌀로 부드럽게 접습니다. 물냉이와 오렌지 샐러드가 너무 맛있습니다. 사프란을 사용할 때마다 나는 사프란을 구입하는 아주 친절한 이란 청년을 생각합니다. 한번은 내 친구가 저녁을 먹으러 왔을 때 나는 그녀에게 내가 아미르에게서 받은 아름다운 이란 사프란 통조림을 보여주었다. 몇 년 후 « The Spice Grasp at Bistro Unique »이 탄생하여 최근에 출판되었습니다. 화려한 사프란 용기에 불이 붙은 그런 재미있는 읽기, 픽션 식도락 소설. 저자는 나의 친애하는 친구 samantha_verant입니다. 그녀는 몇 권의 책을 썼고 모든 책의 감사의 말에 내 이름을 언급합니다 😅 이제 내 오스카 연설의 끝입니다. 사랑스러운 curry.and.chips가 주최하는 Completely satisfied Friday! __________________________________
How lovely to be inspired to write by a beautiful tin of saffron. The dish is also inspired. Golden rice topped with exotic pistachios. We become accustomed to these ingredients but aren’t they really so exciting to use.
Persian Cuisine is so aromatic and delicious. I make similar one and there is the famous crusty one too! I had a friend who lived in the old Persia and brought back delicious recipes I cook from time to time….. memories from the 80ish. Happy Friday to you ❤️
This saffron rice looks perfect, Oksana. Every grain is fluffy and separate. Saffron is beautifully infused in it and dill, pistachios and barberries are hallmarks of Iranian cuisine and so good in this rice. Thank you for cooking along for #fridayriceclub today. Yes this rice dish definitely deserves a posting andcyou made a beautiful one! 😍 It is a staple in my kitchen, I have a post-it of the measurements sticking at my fridge. 😉 I often make a shortcut without the saffron, but with the saffron it is surely more festive and impressive. Cooked this way, the rice is a wonderful company for all sorts of other dishes. But I could also eat it on its own.😊

The saffron-infused water poured over 1/4 of the rice is such a great trick to achieve the dual colors. I took this rice to a get-together once and for rave reviews. Love how this rice packs so much flavor!😍😍 Wonderfully presented Oksana!🙌🙌
