I recognised this as soon as I saw it and for a moment I thought you had gone ahead and prepared the egg yolk using the other suggestions we discussed for drying 😂 I am already in weekend mode, have just got a soup on and will be joining you in a minute. 😂 there really is a place for frozen spinach and can be very useful, particularly in this kind of volume as it doesn’t take so much room as fresh too 😂. I still haven’t made this due to a childhood issue with creamed spinach which was not only frozen but also puréed into submission 😅 But I’m getting the impression that this dish might be a kind of therapy – who can say no to paprika pine nuts 😍 Great idea to grate a cooked yolk, Oksana – as interesting as that curing process sounds, it is a lot of time and energy 😅

  5. I’m the opposite of you, I always have frozen spinach. I only buy fresh if I know I will be cooking it that day.

  6. This is what we’ll have tonight! And exact the same: without the cured yolks as I was to late for those. So I was thinking of adding grated cooked yolks.

  8. That’s one that I still have to try and I’m very curious about 😍😍. It’s been a long time since I had creamed spinach 🙌. It’s something I had as a student a lot and I wasn’t cooking a lot of interesting dishes back then 😂. The cured yolk must be amazing in this dish ❤️❤️

  11. This is exactly what is pending in my drafts folder to post this weekend 😂 great minds that think alike really do cook ottolenghi. I loved this dish, I’ve made it a few times and it is always received so well. I haven’t bothered with the yolks either! Seems like gilding the lily to me.   12. Isn’t this delicious Oksana! I did make the cured egg yolks too 😃 and they make a difference. You can make the without all the oven time, it would only take a few more days in an unheated oven to dry. They are worth the effort!

  13. I’ve cooked this a while back as a side to steak but you’ve presented it quite beautifully. I didn’t end up making the cured yolks either😁. Found it seriously delicious though a bit heavy with the cheese and cream in it. Happy Friday, dear Oksana ❤️❤️
