I actually looked at this recipe again yesterday. I have bought more beetroot than I though I needed and planned exactly as you say. Getting ahead and roasting them so they are ready to use through the week. The charred spring onion is an absolute must here and I am so happy to see you are finally getting the chance to enjoy all those beetroot recipes 😂
This dish is so wonderful ❤️you made it so beautifully, while I found it so difficult to photograph…but definitely so easy and enjoyable to eat 😂
An amazing starter this. Love beets but, like you, don’t get to eat enough. Layered with creamed feta and charred spring onions, this is pure deliciousness. Such a lovely, richly-colored salad steeped in poignant flavors. I don’t know why I don’t cook more often with beets. We never really had them growing up so I guess they’ve never been in my radar. You have inspired me to take the plunge with more beet recipes!

Yaaay 🙌 so glad to see a beet recipe on your feed 🙌. Lovely. That charred green onions really elevate this dish, isn’t it. And leftovers pack well for next day’s lunch although some of the beets colour runs into the cream. Love this recipe from EGT ❤️❤️. What did you make for your husband?

I love beets and this is such an awesome combo! I would eat it for dinner but would have to tweak the recipe a bit. I would use just plain labneh instead of feta base as feta & crème fresh are a bit too much for me. I’m on cheese detox…or at least I’m trying to be 😜
It’s amazing how versatile Beetroots are. Nordic countries favourite vegetable! They have become a trend with new flavour twists. Looks delicious Oksana💜.
