This looks so good! I adore Brussels sprouts. I try never to cook with EVOO yet all ottolenghi recipes call for it. I opt for ghee. I’ve been trying to bring more brown rice to the table. My husband grew up eating jasmine rice everyday! I’m going to try more cauliflower rice, when the prices are right. I wonder if i could fool Freddie lol❤️

I really do love Risotto , with rice but also barley or spelt…. speltotto 😂😂 and may make one to use up the last ⅓ of a bottle of white wine in the next days 😍. Lovely to have this topped with healthy bussel sprouts.
I have also ditched all the vegetable oils and substitute either with olive oil or often with coconut oil or avocado oil I need something more neutral. And also increasingly switching to brown rice. This recipe js gorgeous, dear Oksana. I always marvel at your capacity to bring something back from your archives knowing exactly what it was and how was its flavor. This looks (sounds too😂) just awesome, Oksana!! I agree with your version to roast the wee sprout felllas in olive oil in lieu of vegetable oils. I’m wondering about your reason, but I think I probably already know. We still use avacado oil a little now and then, but not much. Thank you for sharing and mostly, thanks for your energy and light! 😍🙋♂️
This risotto is really delicious 😋 Knowing why you are changing your cooking I’m still glad that I don’t have to give up carbs – wouldn’t want to miss dishes like that 😍
Looks creamy and gorgeous, Oksana 👏😍. I can’t recollect making this one. Have to grab some sprouts before they are gone. Olive oil is great for cooking. I have been using it for years now and use vegetable oil only if I’m frying, which happens maybe couple of times in a year. Looking forward to your dishes with the new approach. Interesting. I am usjng more brown than white rice these days, and found a great risotto brown grain mix by Gallo which is really good. The only thing I cannot get on with is quinoa. When I eat it out it’s nice, but when I cook it it’s stodgy! Cauliflower looks like a great alternative, thank you
Eating more cauliflower rice, than normal rice now. So much more flavor!

Have you used pearl barley? I read it is high in fiber, calcium with a good dose of vitamins and minerals. I bought some to move away from rice and maybe mixing a little with cauliflower rice might work too?!
Before you know it you’ll be a cauliflower rice expert … (Ps: you might never want to eat regular rice again 😉)
